Lentil's are known to be easily digestible, low in calorie but high in protein which makes it an "must-have" when looking for energy, gut-health and weight-loss.
This is an easy recipe that combines the healing powers of kale with the anti-oxidative effects of lentils. Make the lentils fresh or open up a container. And if it's a container you choose, watch the sodium count, sometimes it's just not worth the convenience when looking for longevity.
INGREDIENTS
- 1 cup cooked lentils
- 1/4 red onion, diced ( 1/4 cup)
- 1/2 cup shredded carrot
- 1/2 teaspoon Himalayan salt
- 1/4 cup apple cider vinegar
- 1/2 lemon, juiced
- 2 tablespoons oil
- 1 teaspoon maple syrup or honey
- ¼ cup parsley, roughly chopped
- 1/2 carrot, peeled and small diced ( ½ cup)
- 1 cup tightly packed kale, thinly slice
COOKING TIME
20 minutes
INSTRUCTIONS
Croquette
- set lentils aside
- set carrots and kale aside
- combine all the herbs, lemon juice, apple cider vinegar, maple syrup (or honey) and oil in a mixing bowl
- mix until all ingredients are combined
- take dressing and add to kale
- massage kale for a few minutes with your hands
- add carrots, onion, and lentil
Serve.
