Lentil's are known to be easily digestible, low in calorie but high in protein which makes it an "must-have" when looking for energy, gut-health and weight-loss.

This is an easy recipe that combines the healing powers of kale with the anti-oxidative effects of lentils. Make the lentils fresh or open up a container. And if it's a container you choose, watch the sodium count, sometimes it's just not worth the convenience when looking for longevity.

  • 1 cup cooked lentils
  • 1/4 red onion, diced ( 1/4 cup) 
  • 1/2 cup shredded carrot 
  • 1/2 teaspoon Himalayan salt 
  • 1/4 cup apple cider vinegar
  • 1/2 lemon, juiced 
  • 2 tablespoons oil 
  • 1 teaspoon maple syrup or honey 
  • ¼ cup parsley, roughly chopped 
  • 1/2 carrot, peeled and small diced ( ½ cup) 
  • 1 cup tightly packed kale, thinly slice



20 minutes




  • set lentils aside
  • set carrots and kale aside
  • combine all the herbs, lemon juice, apple cider vinegar, maple syrup (or honey) and oil in a mixing bowl
  •  mix until all ingredients are combined
  • take dressing and add to kale
  • massage kale for a few minutes with your hands
  • add carrots, onion, and lentil
