INGREDIENTS
- 1 cup romaine lettuce, sliced
- 1 cup kale, thin sliced
For Ceasar Dressing
- ½ avocado
- 2 tsp nutritional yeast
- 3 garlic clove
- 2 Tsp lemon juice
- 1/2 teaspoon Himalayan salt
- 1 teaspoon apple cider vinegar
- 3/4 cup of water
For Chickpea Croutons
- 1/2 cup chickpea, cooked
- 1 tsp Himalayan salt
- pinch cayenne pepper
- 1/4 teaspoon turmeric
- 1 Tsp lemon juice
- 1/2 tablespoon coconut oil
INSTRUCTIONS for Dressing
- Blend till smooth
- Mix all ingredients, bake on a parchment-lined tray at 420 for 30 minutes, till crisp
- Chop lettuce and kale and add into a bowl.
- add 2 tablespoons avocado caesar dressing
- Marinate into kale & lettuce
- Add chickpea croutons
