INGREDIENTS for Salad
- 3 celery stalks, thin sliced
- 1 cucumber
- ⅓ cup parsley, chopped
- ¼ cup mint, chopped
- 1 Tsp olive oil
- 1 cup romaine lettuce
- 1/2 tsp sea salt and black pepper
INGREDIENTS for Dressing
- 1 cup sunflower seed
- ¼ cup lemon juice
- ¼ cup apple cider vinegar
- ¼ cup raisins, soaked in
- 1 ½ cup water
- 3 garlic cloves
- 2 Tsp red onion
- 1 Tsp parsley
- ½ tsp dill
- 1 Tsp scallion
- Gently mix all ingredients for the salad together in a bowl, cover and set aside.
- Blend all ingredients for vegan ranch dressing, add small amounts of water if too thick.
