Vegan Creamy Cauliflower Soup

One serving of cauliflower contains 77 percent of the recommended daily value of vitamin C. It’s also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese.

I love creamy, savory foods and this soup is just that. 


INGREDIENTS

  • 4 cups of vegetable broth
  • 1 cup chopped cauliflower
  • 1/2 cups butternut squash or any root veggie diced
  • 1 teaspoon of sea salt
  • 1/4 cup parsley
  • 1 thyme sprigs
  • 3 teaspoons of olive oil
  • 1 tablespoon fennel seeds
  • 1/4 cup sunflower seeds (or nuts if you choose)
  • cayenne to taste

COOKING TIME

15 minutes

INSTRUCTIONS

  • boil broth
  • add in all seasonings –herbs & spices
  • let simmer for 5 minutes
  • add in squash for 20 minutes
  • add in cauliflower for 7 minutes
  • Transfer into a Vitamixer or a high-speed blender and mix for 3 minutes
  • Garnish with parsley & seeds
