INGREDIENTS
- 4 cups of vegetable broth
- 1 cup chopped cauliflower
- 1/2 cups butternut squash or any root veggie diced
- 1 teaspoon of sea salt
- 1/4 cup parsley
- 1 thyme sprigs
- 3 teaspoons of olive oil
- 1 tablespoon fennel seeds
- 1/4 cup sunflower seeds (or nuts if you choose)
- cayenne to taste
COOKING TIME
15 minutes
INSTRUCTIONS
- boil broth
- add in all seasonings –herbs & spices
- let simmer for 5 minutes
- add in squash for 20 minutes
- add in cauliflower for 7 minutes
- Transfer into a Vitamixer or a high-speed blender and mix for 3 minutes
- Garnish with parsley & seeds
