
Liver Cleansing Beet Salad
The redness of this root gets all over your hands, cutting board and knife. It's bold and beautiful with the nutritional healing that only mother nature can offer.
INGREDIENTS
- 3 medium beets, diced
- ½ medium onion, thinly sliced
- ½ cup of water
- 1 teaspoon vinegar
- ¼ cup walnuts, chopped
- 1 tablespoon parsley, chopped
- ½ cup extra virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons date syrup
- 1 teaspoon salt
- ½ tablespoon black pepper
- Steam beets for about 15 -minutes
- Sauté the thinly sliced onion in the water and vinegar for about 2 minutes.
- Remove water from onions and place in a bowl
- Add beets
- Toss with the chopped walnuts, chopped parsley, extra virgin olive oil, cider vinegar, Dijon mustard, date syrup, salt, and black pepper
- Mix all ingredients
