INGREDIENTS
- 3 medium beets, diced
- ½ medium onion, thinly sliced
- ½ cup of water
- 1 teaspoon vinegar
- ¼ cup walnuts, chopped
- 1 tablespoon parsley, chopped
- ½ cup extra virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons date syrup
- 1 teaspoon salt
- ½ tablespoon black pepper
INSTRUCTIONS
- Steam beets for about 15 -minutes
- Sauté the thinly sliced onion in the water and vinegar for about 2 minutes.
- Remove water from onions and place in a bowl
- Add beets
- Toss with the chopped walnuts, chopped parsley, extra virgin olive oil, cider vinegar, Dijon mustard, date syrup, salt, and black pepper
- Mix all ingredients
