Minted Cucumber Chickpea Salad

This refreshing summer salad will have your taste buds craving more! It is fresh, super healthy and has the simplest of ingredients. Plus the cucumbers are incredibly healthy for us this time of year.


  • 2 Servings
  • 1 Cucumbers — peeled and very thinly sliced
  • 1/2 can of chickpeas
  • 1/2 cup freshly made
  • sea salt to taste
  • 1/2 cup fresh lemon juice
  • 1/4 cup of finely chopped mint leaves
  • 1/2 Lemon
10 minutes
  • Cut cucumbers in half and scoop out seeds with a spoon
  • Spread cucumber in a large baking dish and sprinkle evenly with salt
  • Add mint and chickpeas in a bowl
  • Combine lemon juice and date syrup in a bowl and mix thoroughly.
  • Add cucumber slices and chopped mint and mix well. Serve chilled.
