INGREDIENTS
- 1/2 medium Cucumber
- 2 cups Watermelon
- pinch Cayenne pepper
- 4 cups vegetable broth
- 1 celery stalks
- ¼ cup red onion, diced small
- ¼ cup mint
- 2 Tbs lemon juice
- 1 tsp Himalayan salt
- ½ cup parsley
- 1 tsp olive oil
- 1 clove garlic, diced
- 1/2 avocado diced
COOKING TIME
20 minutes
INSTRUCTIONS
- Peel and dice watermelon and cucumber
- dice celery
- mince red onion, garlic, parsley and mint
- combine in the pan, add seasonings
- add broth, mix well, serve
